How to cook pulled pork?

Get yourself a good quality joint of pork. Prepare as normal and place on a roasting tray, cover in tin foil and add water to the bottom of your roasting tray.

Cook on a low heat 120-150 degrees c for 4-5 hours depending on the size of the joint. Probe before serving and ensure the meat is cooked to around 85 degrees c (pork is safe to eat at 75 degrees c but you will not have the pulled effect).
Empty the juices from the roasting tray into your gravy before serving and then when carving your pork will have the pulled effect.
